Cataratto Bianco. A white traditional in the Trapani area and used in Marsala wine, characterized by a delicate flavor and medium alcohol level.

Inzolia, Insolia or Anzolia. Used to create dry white table wines, either as a varietal or blended with varieties such as chardonnay.

Cataratto is a Sicilian grape commonly used in Marsalas, and Inzolia is another indigenous heirloom variety. This wine combines the delicate flavors of the Cataratto variety with the dry, lovely flavors of the Inzolia grape.

The result is a pale, straw-colored, light-bodied wine that is supple and crisp, providing an excellent companion for summertime seafood dishes.
